The Monsooned Malabar Process
Monsooned Malabar, also referred to as Monsoon Malabar, is a traditional process where harvested coffee beans are exposed to the monsoon rains and winds of the Malabar Coast for three to four months. This exposure causes the beans to swell and lose their original acidity, resulting in a remarkably neutral pH balance. The process not only enhances the beans' unique characteristics but also contributes to the coffee's renowned flavor profile.
A Unique Flavor Profile
Our Italian Roast features Monsooned Malabar beans, which are known for their heavy body and pungent characteristics. The coffee presents a musty, chocolatey aroma complemented by subtle notes of spice and nuts. The beans undergo sun-drying in expansive barbecues before being cured and sorted into 'AA' and 'A' grades. This meticulous process ensures that only the highest quality beans are selected for roasting.
The Monsooning Process
From June through September, selected beans are exposed to moisture-laden monsoon winds in well-ventilated warehouses. During this time, they undergo careful handling, including spreading, raking, and turning at regular intervals. The beans absorb moisture, grow significantly larger, and turn a pale golden color. Afterward, they undergo further micro-sorting to ensure the highest quality monsooned beans are used.
